Lemon, Chickpea & Vegetable balls

Lemon, Chickpea & Vegetable balls (sugar free, dairy free, egg free, gluten free)

These have become a bit of a go-to for me.  They are so easy (especially if you have a food processor) and they are packed full of flavour and goodness.  They're great on a salad.


150g grated carrot

2 spring onions including all the green bits

2 large garlic cloves

1 can chickpeas (around 425g)

2Tbs lemon juice

1 dessert spoon tahini

1 tsp salt

5 Tbs chickpea flour


I use my food processor to grate the carrot.  Then I add all the remaining ingredients and blitz until just combined.  But if you don't have a food processor, grate the carrot and use a masher to crush the chickpeas a bit.  Roll them into balls and fry in about 2 Tbs coconut oil on medium heat.  I have an induction top and I use #4 (it goes up to ten, so that should give you an idea.)

NB. The mixture might seem very very moist, especially if you've used a food processor, but don't worry, after the cooking they'll be perfect!
